Lentils with Arugula

Features fresh seasonal arugula.
Ingredients
- 1 cup brown (or use French lentils if you can find them) lentils
- 3 cups water
- 1 cup fresh arugula (remove large stems), finely sliced
- 1 medium sweet onion, thinly sliced
- 3 Tablespoons Bragg Apple Cider Vinegar
- 1 Tablespoon extra virgin olive oil
- 1Tablespoon Bragg Liquid Aminos
- Juice of 2 limes
BRING to a boil in a medium saucepan
- 1 cup brown (or use French lentils if you can find them) lentils
- 3 cups water
- COVER; lower heat and simmer for 20-30 minutes, until lentils are soft (but not mushy).
- DRAIN excess water; place lentils in a large mixing bowl.
ADD to the lentils
- 1 cup fresh arugula (remove large stems), finely sliced
- 1 medium sweet onion, thinly sliced
MIX in another bowl
- 3 Tablespoons Bragg Apple Cider Vinegar
- 1 Tablespoon extra virgin olive oil
- 1Tablespoon Bragg Liquid Aminos
- Juice of 2 limes
- ADD liquids to lentils and mix thoroughly.
- SERVE immediately.

- NOTE FROM NANCY: Parents are ALWAYS shocked to learn their kids ate this delicious dish after learning to prepare it in our classes. The spicy, peppery flavor of fresh-picked arugula, combined with the earthiness of the lentils and the tartness of the fresh lime juice makes this dish a winner!
